Crumbled Froma Abbaye St. Benoit du Lac cheese is the perfect compliment to tender grilled duck and sweet applesauce.

  • 1 package POM® Rustic Buns (6)
  • 2 duck breasts (Lac Brome) (each 8 oz/250 g)
  • 1/2 tsp (2 mL) salt
  • 1/2 cup (125 mL) unsweetened applesauce
  • 1/2 cup (125 mL) crumbled Froma Abbaye St. Benoit du Lac cheese


Preheat grill to medium heat; grease grate well. Season duck with salt. Grill duck breasts skin side down for 8 to 10 until golden brown. Flip and continue to cook for 2 to 4 minutes or until medium-rare or cooked to preferred doneness. Let rest for 10 minutes before slicing.

Slice duck breast thinly across the grain. Assemble duck in buns with applesauce and cheese.
