Serve this irresistible Gruyère grilled cheese topped with sautéed balsamic mushrooms with a simple green salad for a satisfying vegetarian meal.

Ingredients


  • 4 slices POM® Wheat Bread
  • 1/4 cup (60 mL) butter, divided
  • 1/2 onion, chopped
  • 1 clove garlic, minced
  • 2 cups (500 mL) thinly sliced mushrooms
  • 1 tbsp (15 mL) balsamic vinegar
  • Pinch each salt and pepper
  • 4 slices Gruyère cheese

Directions


In large skillet, heat 2 tbsp (30 mL) butter over medium heat; cook onion and garlic for about 2 minutes or until starting to soften. Add mushrooms, balsamic vinegar, salt and pepper; cook, stirring, for about 5 minutes or until mushrooms have browned and moisture has evaporated.

Divide mushroom mixture evenly between two slices of bread. Top with Gruyère and cap with remaining bread. Heat remaining 2 tbsp (30 mL) butter in skillet set over medium-low heat; cook sandwiches for 3 to 4 minutes per side or until crisp, golden brown and cheese is melted.

Tip: Substitute any cheese you like for the Gruyère cheese.
