Ingredients
Breakfast Wrap:
- 4 POM® 9 Grains Large Tortillas
- 1 Cup (250g) Chickpeas, drained
- 2 Tbsp (30g) Tahini
- 1 Tsp (5mL) Lemon Juice
- 1 Tbsp (15g) Olive Oil
- 3 Cups (750g) Baby Kale
- 1 Avocado, peeled, pitted, and sliced
- 8 Hard Boiled Eggs, sliced
- 4 Tbsp (60g) Hemp Hearts
Honey Dijon Vinaigrette:
- 3 Tbsp (45g) Dijon Mustard
- 2 Tbsp (30g) Honey
- 1 Tbsp (15mL) White Vinegar
- 1 Tbsp (15mL) Olive Oil
Directions
- In a mixing bowl, roughly mash up chickpeas with a fork, then, mix in tahini, lemon juice and olive oil.
- Heat up a dry fry pan over high heat and quickly toast up each tortilla for about 20-30 seconds per side until toasty, but, still pliable.
- Equally divide and spread each tortilla with chickpea mixture, scatter with baby kale, then, layer on avocado slices, and egg slices, and sprinkle with hemp hearts.
- Fold up the bottom and wrap to serve with honey Dijon vinaigrette for dipping.
