Get your day revved up with this flavourful vegetable bagel sandwich with herbed goat cheese. It will definitely keep you fueled until lunch time.

Ingredients


  • 1 POM® Everything Bagel, halved and toasted
  • 2 tbsp (30 mL) herbed goat cheese, softened
  • 8 slices cucumber
  • 2 Boston lettuce leaves
  • 1/4 cup (60 mL) alfalfa sprouts
  • 1/4 ripe avocado, peeled, pitted and sliced

Directions


Spread goat cheese on bottom half of bagel. Top with cucumber, lettuce, alfalfa sprouts and avocado. Cap with top of bagel. To serve, cut in half.

Tip:
Substitute arugula, spinach or shredded and stemmed kale for Boston lettuce if desired.

This is also delicious with pea sprouts or sunflower sprouts.
