POM® Everything Bagels
Ingredients
- 1 POM® Everything Bagel, halved and toasted
- 2 tbsp (30 mL) herbed goat cheese, softened
- 8 slices cucumber
- 2 Boston lettuce leaves
- 1/4 cup (60 mL) alfalfa sprouts
- 1/4 ripe avocado, peeled, pitted and sliced
Directions
- Spread goat cheese on bottom half of bagel.
- Top with cucumber, lettuce, alfalfa sprouts and avocado. Cap with top of bagel.
- To serve, cut in half.
Tip:
Substitute arugula, spinach or shredded and stemmed kale for Boston lettuce if desired.
This is also delicious with pea sprouts or sunflower sprouts.
