- 1 POM® Everything Bagel, halved and toasted
- 2 tbsp (30 mL) herbed goat cheese, softened
- 8 slices cucumber
- 2 Boston lettuce leaves
- 1/4 cup (60 mL) alfalfa sprouts
- 1/4 ripe avocado, peeled, pitted and sliced
Spread goat cheese on bottom half of bagel. Top with cucumber, lettuce, alfalfa sprouts and avocado. Cap with top of bagel. To serve, cut in half.
Substitute arugula, spinach or shredded and stemmed kale for Boston lettuce if desired.
This is also delicious with pea sprouts or sunflower sprouts.
