Ingredients

Homemade Chili:

  • 4 POM® Signature Gold Sausage Buns
  • 4 All-Beef Hot Dogs
  • 2 Cups (500g) Cheddar Cheese, shredded
  • 4 Tbsp (60g) Chopped Parsley
  • Homemade Chili (recipe below)

  • Homemade Chili:

  • 4 Lb. (2 Kg) Beef Chuck Roast
  • 2 Tbsp (30mL) Olive Oil
  • Salt and Pepper, to taste
  • 6 Cloves of Garlic, crushed
  • 1 Large Spanish Onion, chopped
  • 1 Red Bell Pepper, chopped
  • 3 Cups (750mL) Beef Broth
  • 2 x 14 oz (400 g) cans of Red Kidney Beans
  • 1 x 28oz (800g) Can of Crushed Tomatoes
  • 1/2 Cup (125g) Tomato Paste
  • 1 Tbsp (15g) each of Cumin, Smoked Paprika, Onion Powder and Garlic Powder
  • 1 Tsp (5g) Cayenne Pepper

  • Directions

    1. Preheat the oven to 350°F (175°C)
    2. Season beef on all sides with salt and pepper.
    3. In a large oven-proof lidded Dutch pan, sear roast on all sides over medium-high heat until well browned and set aside.
    4. Add in a beef broth and scrape the bottom with a wooden spoon, to release all the flavourful brown bits, reduce the heat to medium
    5. Add in garlic, onions and red pepper and sauté for about 5-7 minutes stirring frequently, until vegetables have softened.
    6. Add in beef broth, red kidney beans, crushed tomatoes, tomato paste, and all the spices listed and stir to incorporate all of the ingredients.
    7. Add the seared beef back to the pot, cover and cook in the oven at 350°F (175°C ) for 3 hours.
    8. Turn roast over and continue cooking at 350°F (175°C) for 2-3 hours, until the meat falls easily in shreds.
    9. Drain the juices and reduce the liquid to approximately 1.5 cups (375ml).
    10. Pour back over cooked beans and pepper mixture.
    11. Shred and stir the beef back in, to incorporate all the ingredients.
    12. Preheat the grill to medium heat.
    13. Grill hot dogs, turning occasionally for about 8-10 minutes until heated through.
    14. Sprinkle shredded cheese evenly into each sausage bun.
    15. Place grilled hot dog on top of cheese – heat from a hot dog should slightly melt cheese, then layer with chili and finish with fresh chopped parsley.
