Ingredients
Sushi-Style Tortilla Roll:
- 2 POM® Original or 100% Whole Wheat Large Tortillas
- 1 cup Sushi Rice, cooked
- 1 tbsp Rice Wine Vinegar
- 1 tsp Sugar
- 1 - 8oz Salmon Fillet, cooked
- 2 Snack-Size Toasted Nori Sheets
- 1 cup Matchstick-Cut Cucumbers
- 1 cup Matchstick-Cut Carrots
- 1/2 cup Red Cabbage, thinly sliced
- 1/2 cup Avocado, peeled, pitted, and sliced
- Salt and Pepper, to taste
Spicy Soy Mayo Sauce:
- 2 tbsp Spicy Mayo
- 1 tbsp Mayonnaise
- 1 tbsp Soy Sauce
- 2 tsp Rice Wine Vinegar
- 1 tsp Sugar
Directions
Spicy Soy Mayo Sauce:
- 1. In a small bowl, stir together soy sauce, spicy mayo, regular mayo, rice wine vinegar, and sugar until combined.
Sushi-Style Tortilla Roll:
- Reheat the rice in the microwave for 30 seconds to 1 minute. Stir in rice wine vinegar and sugar.
- Flake salmon into large chunks. Tear nori sheets into 1-inch pieces.
- Place tortillas on a clean work surface. Spread rice mixture evenly over each tortilla, then top with salmon, cucumbers, carrots, cabbage, avocado, and nori pieces. Roll up tightly and set aside.
- Cut the tortilla into 1-inch pieces. Serve with soy mayo sauce.
