- 2 slices POM® White Bread, toasted
- 3 tbsp (45 mL) light sun-dried tomato cream cheese spread
- 1/3 cup (75 mL) alfalfa sprouts
- 1/2 ripe avocado, peeled and diced
- 4 cherry tomatoes, diced
- 1 piece (1 inch/2.5 cm) English cucumber, diced
- Pinch each salt and freshly ground pepper
Spread cream cheese evenly over each slice of bread; top with alfalfa sprouts. Toss together avocado, tomatoes and cucumber; spoon over top. Sprinkle with salt and pepper.
