Roast Beef with Horseradish Mayo and Arugula Wraps

Ingredients
- 4 POM® Original Tortillas, 10 in.
- 1/4 cup (60 mL) mayo
- 1 1/2 tsp (7 mL) horseradish
- 1 cup (250 mL) baby arugula
- 200g roast beef or leftover sliced steak
- 1 medium ripe tomato, sliced
- Salt and pepper to taste
Directions
- In a small bowl mix the mayo and horseradish until blended.
- Set aside.
- Lay one tortilla on a surface.
- Spread 1 tbsp of horseradish mayo over the whole tortilla leaving a one-inch border.
- Place 1/4 cup arugula along the bottom. Top with 50g roast beef, two slices of tomato and salt and pepper if desired.
- Fold in the sides and roll up.
- Repeat with remaining tortillas.
