Sweet Cinnamon Tortilla Layer Cake

If you love cake, this showstopper will hit all your cravings – and it’s made with POM® Tortillas!  This recipe is way easier than it looks, and creates an impressive dessert to serve after dinner.

Ingredients

  • 8 POM® Original Tortillas, large
  • 3/4 cup Salted Butter, melted
  • 1 cup Sugar
  • 1/4 cup Ground Cinnamon
  • 2 250g packages Cream Cheese, softened
  • 1 cup Sour Cream
  • 1/4 cup Honey

Directions

  1. Mix sugar and cinnamon together in a bowl. Lightly brush all tortillas with butter and sprinkle with cinnamon sugar. (Note: Keep tortillas covered to prevent drying)
  2. In a bowl, mix together cream cheese, sour cream and honey until combined using a hand mixer. Place cream cheese mixture into a piping bag with a large round tip.
  3. Place the first Tortilla on the serving dish with a little cream cheese mixture on the bottom of the serving plate to keep it from moving. Pipe a thin layer about 1/4 inch thick and sandwich with another cinnamon sugar tortilla. Repeat until all tortillas are layered with cream cheese except the top layer. Spoon whipped cream in the center of the top tortilla and top with berries and icing sugar. (Note: This can be made ahead covered in the fridge overnight. Just top with whipped cream and berries before serving.)
  4. Garnish with whipped cream, fresh berries and a dusting of icing sugar
