Ingredients
Cinnamon Bake:
- 1 Package of POM® Original Large Tortillas
- 1 Cup (250g) White Sugar
- 3 Tbsp (45g) Cinnamon
- 1 Cup (250g) Cream Cheese
- 2 Tbsp (30g) Butter
- 2 Egg Yolks
- 1/2 Cup (125mL) Heavy Cream
Frosting:
- 1 Cup (250g) Cream Cheese
- 1 Cup (250g) Icing Sugar
- 1/4 Cup (60g) Butter, softened
- 1/2 Tsp (2.5mL) Vanilla
Directions
- Preheat the oven to 375°F (190°C).
- In a large bowl mix together, sugar with cinnamon, cream cheese, softened butter, egg yolks, and heavy cream.
- Spread 1 tortilla with prepared cream cheese mixture and lightly roll up each one.
- Cut each into 4 equal pieces and arrange into an oven-proof pan.
- Bake at 375°F (190°C) for 30 to 40 minutes until golden brown and crispy.
- Prepare frosting by mixing all the ingredients together.
- Spread over hot tortillas fresh out of the oven.
